Gazpacho

6 medium tomatoes, diced,finely and peeled
2 cucumers, seeded and diced finely, peeled
1 onion, diced finely
1 or 2 cloves of garlic
1/2 cup olive oil
3 T vinegar
4 t salt
1/4 t pepper
1 (4 oz) jar of pimientos, drained and diced finely
1/2 t cayenne pepper
1 to 1 1/2 large cans of V-8 or tomato juice

Blend all ingredients in large bowl and chill several hours before serving.

Serves 10 -12
