Homemade Granola
4 c old fashioned rolled oats
2 c sweetened, shredded coconut
2 c sliced almonds
3/4 c vegetable oil
1/2 c honey
1 1/2 c small diced dried apricots
1 c small diced figs
1 c dried cherries
1 c dried cranberries
1 c roasted, unsalted cashews
Preheat oven to 350. Toss oats, coconut and almonds together in a large bowl. Whisk the oil and honey in a small bowl. Pour over oat mixxture and toss with a wooden spoon until coated. Pout onto a 13 X 18 baking sheet. Bake stirring occasionally, until the mix turns a nice even golden brown, about 45 minutes.
Remove from oven and cool, stirring occasionally. Add remaining ingredients. Store in an air tight container or freeze.
